Summertime means grillin', and lots of grillin' I shall do! I've been recently reading a lot of food-related blogs, websites, and social media to get some ideas for said summer grilling festivities, and I came across this mouth-watering recipe by Bobby Flay in  Food & Wine Magazine that caught my attention: Nacho Burgers! 

I decided to give this recipe a try, which thankfully is simple to make and is a nice way to change up the boring ol' burger by topping it with some delicious salsa, melted cheeses, and crunchy tortilla chips. The salsa gave the burger a nice little kick but wasn't overpowering (also, some like it hot, so you can totally up the spiciness in your salsa if desired, like I did). 

And, of course, no burger is complete without a side of fries. Instead of making my traditional homemade french fries, this time I decided to try an avocado fries recipe I found on HuffPost Taste. The "fries" were avocado slices lightly coated in almond meal and then baked. Followed by bliss. And what's great is that the fries were not only delicious, but they were filling and ― this is the most key here ― I don't feel guilty for eating them! I take the little victories when I can get 'em. Oh, and what's even better, the recipe also included a sweet chipotle dip to go with the fries. Mmmm!

INGREDIENTS

Salsa

  • 3 tablespoons red wine vinegar
  • 1 tablespoon vegetable oil
  • 1 chipotle chile in adobo, seeded and minced
  • 3 plum tomatoes, finely diced
  • 2 tablespoons red onion, finely diced
  • 3 tablespoons chopped cilantro
  • Salt

Cheese Sauce

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups milk
  • 1/2 pound Monterey Jack cheese, shredded
  • 2 tablespoons freshly grated pecorino cheese (if you can't find pecorino, parmesan works too)
  • Salt
  • Freshly ground pepper

Burgers

  • 1 1/2 pounds ground beef chuck
  • Vegetable oil, for brushing
  • Salt
  • Freshly ground pepper
  • 4 hamburger buns, split and toasted
  • Sliced pickled jalapeños and blue corn tortilla chips, for topping

DIRECTIONS

MAKE THE SALSA In a bowl, combine all of the ingredients and season with salt.

MAKE THE CHEESE SAUCE In a saucepan, melt the butter. Stir in the flour and cook over moderate heat for 30 seconds. Whisk in the milk and cook, whisking, until thickened, 5 minutes. Stir in the Jack cheese until melted, then stir in the pecorino; season with salt and pepper. Let cool until spreadable.

MAKE THE BURGERS Light a grill. Form the beef into 4 patties and brush with oil; season with salt and pepper. Grill over moderately high heat until browned outside and medium within, 4 minutes per side. Place the burgers on the buns, top with the cheese sauce, salsa, jalapeños and chips, and serve.

Avocado Fries with Sweet Chipotle Dip

INGREDIENTS

Avocado Fries

  • 3 Firm Avocados
  • 2 Eggs
  • 1/2 Cup Oat Flour (Or - Almond Meal)
  • Salt and Pepper

Sweet Chipotle Dip

  • 1/4 cup non-fat greek yogurt
  • 2 tablespoon low-fat cottage cheese
  • 1 teaspoon chipotle chili powder
  • 2 teaspoons raw honey

DIRECTIONS

Pre-heat oven to 425 F.

Cut avocados into “fry-sized” wedges.

 In one bowl add 1/2 cup of oat flour or almond meal.

In a separate bowl beat two eggs, until blended.

Add salt and pepper to the eggs.

Dip avocado slices in eggs (one slice at a time) then directly place them in the flour. Make sure they’re completely covered in flour.

Place avocado fries on a parchment covered baking sheet evenly spaced.

Bake for 25 minutes (or until brown) flipping them once.

Serve hot.

And for the sweet chipotle dip...

Blend all ingredients in a food processor or blender until smooth. Serve in a dipping bowl. Enjoy!
